About our Japanese A5 Wagyu
What is Wagyu?
The word Wagyu means a specific breed of Japanese cattle with special genetic qualities. This breed of cattle has a predisposition to create a crazy marbling of fat on the inside of the muscle tissue. With Wagyu, the cow metabolizes the fat internally, so it’s integrated within the muscle directly, unlike other cattle. Which results in a rich cut of beef with so much flavor that it practically dissolves once it hits your tongue. The number one principle to achieving the highest graded Wagyu cow, is to manage the stress of the animal to zero. Our Japanese Wagyu comes from a farm in Hokkaido, Japan where they have achieved the highest grading Wagyu in the world.
